(2) Bahan pangan nabati<\/strong>
\nBeberapa sayuran dan buah-buahan yang berwarna kuning atau merah, terutama wortel kaya akan vitamin A. Sedangkan sayuran hijau penting artinya sebagai sumber vitamin A bagi masyarakat di daerah pedesaan karena murah dan mudah didapat secara lokal.<\/div>\n

Tingginya konsumsi provitamin A atau vitamin A saja sesungguhnya tidak cukup, bila tidak diikuti perbaikan status gizi. Dan sesungguhnya dengan mengkonsumsi sayur hijau, gizi lain yang. Sayuran hijau ternyata juga tinggi kadar proteinnya. Bila ditakar berdasarkan berat kering, daun hijau mengandung protein 30\u2013 40%, kira-kira mendekati kandungan protein kedelai.<\/p>\n

Konsumsi 100 gram sayuran hijau saja, atau sekitar dua sendok makan setelah dimasak, dapat menambah 15% dari seluruh konsumsi protein hari itu, di samping menambah sebanyak 100% atau lebih zat kapur (kalsium) dan besi; dan ternyata mencukupi keperluan vitamin A dan vitamin C untuk orang dewasa per hari yaitu 3.500 IU vitamin A dan 30 mg vitamin C.<\/p>\n

Mengkonsumsi makanan sumber vitamin A yang beragam sangat dianjurkan, kemungkinan kekurangan vitamin A karena proses pengolahan yang tidak tepat.<\/p><\/div>\n
