Vitamin A hanya terdapat dalam tubuh hewan,seperti minyak ikan, hati dn lain-lainnya. Tetapi dlam tumbuh-tumbuhan terdapat semacam zat yang menyerupai vitamin A biasa disebut Karotin. Karotin ini setelah tiba didalam hati,diubah menjadi vitamin A karena itu, karotin disebut juga sebagai pro vitamin A.<\/p>\n

Vitamin A pada umumnya stabil terhadap panas, asam, dan alkali. Namun vitamin ini mempunyai sifat yang sangat mudah teroksidasi oleh udara dan akan rusak bila dipanaskan pada suhu tinggi.<\/p>\n<\/div>\n

a) Fungsi vitamin A bagi tubuh.<\/b> <\/span><\/span><\/div>\n
– Sebagai bahan untuk membuat rodopsin yang diperlukan dalam prosse penglihatan.
\n– Untuk pemeliharaan jaringan pelapis.
\n– Untuk membantu proses pertumbuhan tubuh.<\/div>\n

b) Vitamin A Dalam Bahan Makanan<\/b> <\/span><\/span><\/div>\n
Dalam bahan makanan terdapat vitamin A adalah bentuk karoten sebagai ester dari vitamin A dan sebagai vitamin A bebas. Keaktifan biologis karoten jauh lebih rendah dibandingkan dengan vitamin A. Karena karoten merupakan sumber utama vitamin A bagi masyarakat di negara yang sedang berkembang, maka absorpsi dan ketersediaan karoten perlu diketahui. Vitamin A dalam bahan makanan dinyatakan dalam satu kesatuan yang disebut kesatuan internasional ( disingkat ki ) yaitu sebanyak 0.6 mikrogram beta karotin.<\/div>\n

Ada hubungan langsung antara derajat kehijauan sayuran dengan kadar karoten. Semakin hijau daun tersebut semakin tinggi kadar karotennya, sedang daun-daun yang pucat seperti selada dan kol, labu siam, miskin akan karoten.<\/p>\n<\/div>\n

Dari penelitian yang dilakukan diketahui bahwa kemampuan tubuh menyerap karoten yang berasal dari sayuran hanya 33 \u2013 58% atau rata-rata 50%. Tidak semua karoten yang terserap tersebut dapat diubah menjadi vitamin A.<\/p>\n<\/div>\n
