The term vitamine or vitamin was originally introduced by a Polish chemist named Funk. He believes that the substance antidote to the disease beriberi water-soluble amine was a very vital, and from the word vitamine term was born and which later became the vitamin.

When this vitamin is known as a group of organic compounds that are not included in the class of proteins, carbohydrates, and fats. These compounds are present in small amounts in foods but are important for the body to maintain life and growth.

Figure 2.31. Fresh fruits and vegetables as a source of vitaminVitamin is an organic molecule that is very necessary for the body’s metabolic processes and normal growth. Vitamins can not be produced by the human body in sufficient quantities, therefore it must be obtained from food that is consumed. With the exception of vitamin D, which can be formed in the skin when the skin gets sunlight.

In foodstuffs vitamins contained only in a relatively small amount, and there in different forms, some of which are in the form of pro-vitamin or vitamin candidate (precursor) which can be converted in the body into vitamin enabled. Immediately after being absorbed by the body provitamin chemistry changes so that it becomes one or more active form. Almost all of the vitamins that we know today has been identified since 1930.

Vitamins in general can be classified into two main groups: 1.Vitamin the fat-soluble vitamins A, D, E, and K 2.Vitamin the water-soluble vitamin C and vitamin B.

As with fats, vitamins require protein to transport and move from one place to another. Because it is not soluble in water, it is not excluded vitamin- vitamins or excreted, as a result of this vitamin in the body dumped when consumed in large quantities.
