{"id":1413,"date":"2024-02-06T02:07:22","date_gmt":"2024-02-05T19:07:22","guid":{"rendered":"https:\/\/www.tneutron.net\/pangan\/?p=1413"},"modified":"2024-02-05T08:16:38","modified_gmt":"2024-02-05T01:16:38","slug":"understanding-carbohydrates-starch","status":"publish","type":"post","link":"https:\/\/www.tneutron.net\/pangan\/understanding-carbohydrates-starch\/","title":{"rendered":"Understanding Carbohydrates (Starch)"},"content":{"rendered":"<p><span class=\"notranslate\">Carbohydrates by plants kept in the fruit for the supply of energy which is then used to carry out the activity of the rest of his life, so that in the process of maturation of the content of carbohydrates (starches) and sugar are always changing.<\/span> <span class=\"notranslate\"> Changes starch in fruits can be divided into:<\/span><\/p>\n<p><span class=\"notranslate\"> <strong>a.<\/strong><\/span> <span class=\"notranslate\"> <strong>Fruits with high starch content<\/strong><\/span><br \/>\n<span class=\"notranslate\"> Changes in starch content in fruits containing high starch content such as apples and bananas can be seen in Figure 16 and 17. In the apple (Figure 16) when harvested already low levels of starch.<\/span> <span class=\"notranslate\"> During storage starch&#8217;ve stayed a bit it will run out.<\/span> <span class=\"notranslate\"> On bananas (image 17) when harvested still contain starch as much as 20-30%.<\/span> <span class=\"notranslate\"> After 4-8 days of storage at room temperature, starch content decreases to about 4%, and after 12 days of storage starch content will be exhausted.<\/span><br \/>\n<a href=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2016\/12\/image-2.png\"><img loading=\"lazy\" decoding=\"async\" title=\"image\" src=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2016\/12\/image_thumb-2.png\" alt=\"image\" width=\"376\" height=\"186\" border=\"0\" \/><\/a><br \/>\n<span class=\"notranslate\"> Figure 19. Scheme of the starch content in bananas<\/span><\/p>\n<p><span class=\"notranslate\"> <strong>b.<\/strong><\/span> <span class=\"notranslate\"> <strong>Fruit with a low starch content<\/strong><\/span><br \/>\n<span class=\"notranslate\"> Fruits are included in this group are orange, strawberry, and peach (peach).<\/span> <span class=\"notranslate\"> These fruits are virtually no change in levels of starch after harvest and during storage.<\/span><\/p>\n<p><span class=\"notranslate\"> <strong>c.<\/strong><\/span> <span class=\"notranslate\"> <strong>simple sugars<\/strong><\/span><br \/>\n<span class=\"notranslate\"> Changes of sugar in fruits concerning sucrose, glucose and fructose.<\/span> <span class=\"notranslate\"> Changes in sugar content can be grouped into:<\/span><br \/>\n<span class=\"notranslate\"> &#8211; Fruits with high starch content<\/span><br \/>\n<span class=\"notranslate\"> Theoretically when hydrolyzed starch glucose will be formed so that the sugar content in the fruit will increase.<\/span> <span class=\"notranslate\"> But in fact these changes are relatively small or sometimes not changed.<\/span> <span class=\"notranslate\"> This is probably due to the resulting sugar used in the process of respiration, or converted into other compounds.<\/span> <span class=\"notranslate\"> In the figure 18 can be seen changes in sugar levels in apples during storage.<\/span> <span class=\"notranslate\"> Seen that, as soon as harvested apples have higher levels of fructose compared to glucose and sucrose and glucose levels were lowest.<\/span><\/p>\n<p><span class=\"notranslate\">During storage there will be changes in which the starch content decreases, sucrose will go up, and sucrose formed should be broken down into glucose and fructose.<\/span> <span class=\"notranslate\"> Most of the glucose that is formed will be used in the process of respiration to provide energy to be used for fruit metabolism.<\/span><\/p>\n<p><span class=\"notranslate\"> &#8211; Fruits with a low starch content<\/span><br \/>\n<span class=\"notranslate\"> Fruit with a low starch content such as watermelon when harvested containing very little starch content, so it can not be expected that during storage sugar levels will increase.<\/span> <span class=\"notranslate\"> So that ripened watermelon will not turn out to be sweet.<\/span><br \/>\n<a href=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2016\/12\/image-5.png\"><img loading=\"lazy\" decoding=\"async\" title=\"image\" src=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2016\/12\/image_thumb-5.png\" alt=\"image\" width=\"376\" height=\"178\" border=\"0\" \/><\/a><br \/>\n<span class=\"notranslate\"> Figure 21. Scheme of the change of starch and sucrose into fructose and glucose in apples during storage.<\/span><\/p>\n<p><span class=\"notranslate\"> <strong>d.<\/strong><\/span> <span class=\"notranslate\"> <strong>Amino acids and proteins<\/strong><\/span> <strong><br \/>\n<\/strong> <span class=\"notranslate\"> Amino acids such as methionine and betaalanin important in fruit ripening because this amino acid is a precursor of ethylene in fruit tissue.<\/span> <span class=\"notranslate\"> On an apple that has been cooked, the protein content of less than 0.1% (on a fresh weight), and 80-90% of the amount contained in the peel.<\/span> <span class=\"notranslate\"> In figure 19 seen changes in levels of protein in the skin of apples during fruit ripening process.<\/span> <span class=\"notranslate\"> The increase in protein content, followed by the increase in the respiratory process.<\/span><br \/>\n<a href=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2016\/12\/image-7.png\"><img loading=\"lazy\" decoding=\"async\" title=\"image\" src=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2016\/12\/image_thumb-7.png\" alt=\"image\" width=\"378\" height=\"173\" border=\"0\" \/><\/a><br \/>\n<span class=\"notranslate\"> Figure 22.
