Pernahkah kalian melihat ubi jalar disekitarmu?. <b>Ubi jalar <\/b>atau sering dikenal sebagai ketela rambat<b>, <\/b>secara umum memiliki bentuk<b> <\/b>lonjong sedikit tidak beraturan. Memiliki kulit relatif tipis dibanding dengan kulit pada ubi kayu. Daging umbi terdiri dari berbagai warna, yaitu putih, kuning, jingga kemerah-merahan atau ungu. Warna kulit luar berbeda-beda, biasanya putih kekuningan atau merah ungu dan tidak selalu sama dengan warna daging umbi.<br \/>\n<a href=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2017\/10\/clip_image002-1.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; margin: 0px; display: inline;\" title=\"clip_image002\" src=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2017\/10\/clip_image002_thumb-1.jpg\" alt=\"clip_image002\" width=\"388\" height=\"223\" border=\"0\" \/><\/a><br \/>\nGambar 2.11. Di Asia, selain dimanfaatkan umbinya, daun muda ubi jalar juga dibuat sayuran. Terdapat pula ubi jalar yang dijadikan tanaman hias karena keindahan daunnya.<\/p>\n<p>Berbagai jenis ubi jalar dapat ditemui di negara kita, jenis yang cukup populer karena memiliki rasa yang sangat manis menyerupai madu dikenal sebagai ubi Cilembu. Nama Cilembu diambil dari asal ubi jalar dibudidayakan, yaitu Cilembu, Jawa Barat. Konsumsi ubi jenis ini biasanya setelah ubi dibakar\/oven.<br \/>\n<a href=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2017\/10\/clip_image006.png\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; display: inline;\" title=\"clip_image006\" src=\"https:\/\/www.tneutron.net\/pangan\/wp-content\/uploads\/sites\/6\/2017\/10\/clip_image006_thumb.png\" alt=\"clip_image006\" width=\"422\" height=\"164\" border=\"0\" \/><\/a><a name=\"page96\"><\/a><br \/>\nGambar Ubi Cilembu<\/p>\n<p>Papua juga memiliki jenis ubi jalar yang cukup unik mengandung senyawa beta karoten yang mampu menurunkan infeksi HIV\/AIDS. Sehingga diusulkan menjadi diet utama penderita HIV\/AIDS bersama bahan lain. Dibandingkan dengan bahan makanan pokok lain, ubi jalar biasa memiliki kandungan senyawa pembentuk vitamin A tertinggi, yaitu mencapai 14187 IU per 100 gram porsi, atau mencapai 89% kebutuhan harian. Beta karoten termasuk salah satu senyawa pembentuk vitamin A.<\/p>\n<p><b>Sifat kimia<\/b><br \/>\nKomposisi kimia ubi jalar bervariasi tergantung dari jenis, usia, keadaan tumbuh dan tingkat kematangan. Komposisi kimianya seperti diperlihatkan pada Tabel 2.10. Sebagian besar karbohidrat ubi jalar berada dalam bentuk pati.<\/p>\n<p>Tabel 2.10. Oligosakarida penyebab flatulens ini tidak dapat dicerna oleh bakteri karena tidak adanya enzim galaktosidase, tetapi dicerna oleh bakteri pada usus bagian bawah. Hal ini menyebabkan terbentuknya gas dalam usus besar.
