Sifat fisis-morfologis<\/strong><br \/>\nJenis umbi kimpul ini, seperti halnya umbi-umbi lainnya yaitu gadung, garut yang sudah dibahas sebelumnya dan umbi gembili serta suweg yang akan dibahas kemudian, merupakan umbi yang sudah jarang dijumpai disekitar kita. Menurut Irawan (2012), bentuk umbi kimpul <i>(Xanthosoma violaceum<\/i> Schott) silinder sampai agak bulat, terdapat internode atau ruas dengan beberapa bakal tunas. Jumlah umbi anak dapat mencapai 10 buah atau lebih, dengan panjang sekitar 12 &#8211; 25 cm dan diameter 12 &#8211; 15 cm dan umbi yang dihasilkan biasanya mempunyai berat 300 &#8211; 1.000 gram.<\/p>\n<p>Irisan melintang umbi memperlihatkan bahwa struktur umbi kimpul terdiri dari kulit, korteks dan pembuluh floem dan xylem. Kulit umbi mempunyai tebal sekitar 0.01 &#8211; 0.1 cm, sedangkan korteksnya setebal 0.1 cm. Pada pembuluh floem dan xylem terdapat butir-butir pati. Kimpul (<i>Xanthosoma violaceum<\/i> Schoot)<\/p>\n<p><b>2) Sifat kimia<\/b><br \/>\nKomponen utama umbi kimpul seperti umbi-umbi lainnya adalah karbohidrat yang cukup tinggi berkisar antara 31,0 sampai 34,2 g per 100 gram bahan. Kandungan karbohirat yang tinggi, akan menghasilkan energi yang tinggi pula. Selain mengandung karbohidrat, umbi kimpul juga mengandung lemak, protein, vitamin dan mineral. Komposisi kimia umbi kimpul bergantung pada varietas, iklim, kesuburan tanah dan umur panen. Komposisi kimia umi kimpul dapat dilihat pada Tabel 2.15.<\/p>\n<p>Tabel .15. Rasa gatal ini disebabkan karena adanya kristal-kristal kalsium oksalat yang terbentuk seperti jarum. Kalsium oksalat dapat dikurangi dengan pencucian menggunakan air yang cukup banyak. Selain itu rasa gatal juga dapat dihilangkan dengan pengukusan dan perebusan.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1).
