1).<\/strong><\/span> Physical-morphological properties<\/strong><\/span>
\n Have you seen the arrowroot bulbs?<\/span> Like the gadung bulb, this tuber is rarely found around us.<\/span> Garut bulge (Marantha arundinacea L.)<\/i> is a rhizome of the arrowroot plants.<\/span> Garut bulbs are white and wrapped with scales regularly.<\/span> These scales are white to pale brown.<\/span> Rhizoma arrowroot has a length of about 20-45 cm and a diameter of about 2.5 cm.<\/span> In rhizoma arrowroot there are hairs, especially on the bulb scale (Irawan, 2012).<\/span> To clarify the profile of arrowroot bulbs, note the following picture.<\/span>

2) Chemical properties<\/b><\/span>
\n Like other tubers, garut bulbs contain high enough carbohydrate that is favored as a potential source of rice substitute food and supports the food security of Indonesia.<\/span> The chemical composition of the arrowroot bulbs varies depending on the cultivars, the age of the harvest and the state of the grove.<\/span> The chemical composition of the bulbs is presented in Table 2.14.<\/span> Garut bulb starch content ranges from 19.4 to 21.7% and is the largest component after water.<\/span> Carbohydrate content of arrowroot bulbs lower than cassava.<\/span><\/p>\n
