Tapioca starch is a starch extracted from cassava.<\/span> In obtaining starch from cassava (tapioca flour) should be considered the age or maturity of the cassava plant.<\/span> For example, the optimum age cassava plants ready for harvest based on the results of research on one of the varieties of cassava from Java, namely San Pedro Preto is around 18-20 months (Grace, 1977).<\/span> When the cassava tubers left in the ground, the amount of starch will increase up to a certain point, and then the bulbs will form the hard and resemble wood, so the bulbs will be difficult to be handled or processed.<\/span><\/p>\n

1) Quality of Tapioca flour<\/strong><\/span>
\n<\/strong> Quality of starch is determined by the requirements of the standards set by the SII (Indonesian Industrial Standard), or other applicable standards with the aim that the resulting starch product can penetrate markets at home and abroad.<\/span> Factors that determine the quality or tapioca is a quality parameter.<\/span> The quality meter tapioca include physical parameters (shape, smell and color), chemical parameters (moisture content, ash content, crude fiber and metal contamination), physicochemical parameters (degrees white and acid degree), and microbiological parameters.<\/span><\/p>\n

For overseas markets, generally the requirements of the quality standards set by the tapioca flour importing countries, for example the provisions of the American countries, India, and the United Kingdom.<\/span> Standard requirements for quality starch can be exported to the US are set in three levels, namely A, B, and C by the United states, which can be seen in Table 8.<\/span><\/p>\n

India states make provision tapioca flour quality by its use in several types of industries, as shown in Table 9.<\/span>

Meanwhile, the British state to make provision about the requirements of the quality standards of starch that can be received in the UK.<\/span> The provision is simply about remaining water content (moisture content), namely 8-12% (Ministry of Industry, Jakarta, 1976).<\/span> Meanwhile, according to the National Standardization Body in SNI 01-345-2011 quality requirements tapioca flour can be seen in Table 4 above.<\/span> Good tapioca flour is flour that does not clot and have a good smoothness.<\/span><\/p>\n

One institution that requires subtlety as the quality requirements Tapioca starch is The Institute of America (TIA), which divides into three classes of tapioca flour (grade) based on subtlety.<\/span> Standard of fineness of starch according to TIA is presented in Table 9.<\/span><\/p>\n
