Sanitaiser Chemistry
Despite the heat and UV rays are very effective for sanitation process, until now the food industry still relies heavily on chemical disinfectant. The disinfectant will eradicate most of the microbes, although not 100%. What is important is the employee shall consider that microbial spores can survive against disinfectants. So surfaces that have been disinfected is not seteril. After sanitation, the number of microbes is reduced a lot, but not sterile, because the sterile means no microbes.

In the GMP regulations require the use of chemicals that sufficient doses are considered safe. It’s important to follow the usage instructions of the manufacturer. The effectiveness of disinfection depends on the type and concentration, contact time, temperature and pH. Very useful to disinfect a dirty surface of the tool, because disinfectants ineffective. Commonly used disinfectant is chlorine, and ammonium quarterner JOD. Disinfectants are usually dissolved in water.

Chemical Sanitaiser generally grouped by mikroorganime deadly chemical compound that is (1) chlorine-releasing compounds, (2) quaternary ammonium compounds, (3) iodophor and (4) amphoteric compounds.
