1). Physical-morphological properties
Have you seen the arrowroot bulbs? Like the gadung bulb, this tuber is rarely found around us. Garut bulge (Marantha arundinacea L.) is a rhizome of the arrowroot plants. Garut bulbs are white and wrapped with scales regularly. These scales are white to pale brown. Rhizoma arrowroot has a length of about 20-45 cm and a diameter of about 2.5 cm. In rhizoma arrowroot there are hairs, especially on the bulb scale (Irawan, 2012). To clarify the profile of arrowroot bulbs, note the following picture.

2) Chemical properties
Like other tubers, garut bulbs contain high enough carbohydrate that is favored as a potential source of rice substitute food and supports the food security of Indonesia. The chemical composition of the arrowroot bulbs varies depending on the cultivars, the age of the harvest and the state of the grove. The chemical composition of the bulbs is presented in Table 2.14. Garut bulb starch content ranges from 19.4 to 21.7% and is the largest component after water. Carbohydrate content of arrowroot bulbs lower than cassava.
